Quick, easy, delicious coffee at home! Low-Carb, Trim Healthy Mama "S", Paleo, Whole 30

 

Let's face it ladies, Starbucks is expensive. With 5 kids, I'm on the go a LOT, and spend quite a few (too many) mornings out of the house. If I had an extra $6 a day to blow on coffee, I might consider it, but I've found something even BETTER! If you want to make delicious, quick, and easy coffee shop coffee at home, scroll down for two recipes that I've been making at just a fraction of the price!

I reached out to the folks at Keurig with a request to review their K-Compact Single Serve Coffee Maker, and they very generously provided one for me to try out. After two months with this machine, I can whole-heartedly recommend it. It doesn't take up much counter space like other coffee machines, AND (even better) the water reservoir on the back of the machine is big enough that you don't have to constantly refill it. 

Not only am I making my coffee with it every morning, I've been making hot cocoa cups for the kids every weekend as a special weekend treat. We are seriously loving this thing and use it every day!

Making a cup (or two) of coffee to go is super simple, and I just pour one of the recipes below into a travel mug and hit the road. It's perfect for dropping the kids off at their homeschool co-op (or, I can imagine, for dropping kids of at school every morning).

The recipes below are low-carb and designed to help your body burn fat – a win for busy moms on the go!

Quick Peppermint Mocha 

1 K-Cup (my favorite is Caribou Coffee's Medium Roast)

1/2 cup unsweetened almond milk or Original flavor nutpod

Heaping 1/2 Tablespoon cocoa powder

Heaping 1/2 Tablespoon THM Super Sweet Blend or other sweetener (please check this chart if you substitute another sweetener)

3 drops peppermint extract

1 Tablespoon MCT Oil

Quick Pumpkin Pie Coffee

1 Pumpkin Spice K-Cup 

1/4 teaspoon caramel extract

1/4 teaspoon vanilla extract

Heaping 1/2 Tablespoon THM Super Sweet (please check this chart if you substitute another sweetener)

1 Tablespoon MCT Oil

3 shakes of ground cinnamon

1/2 cup unsweetened almond milk or Original flavor nutpod

I use the medium-sized cup option on the Keurig to make a quick cup of coffee. While it's brewing, I put the above ingredients into a milk frother and let it blend and heat (you could use a blender, or just stir it all straight into the coffee, but I recommend mixing well). I then pour my heated “creamer” into the coffee and stir. These recipes are great on the go in a travel coffee mug!

  2. So…how would you adapt the peppermint recipe to a regular coffee maker? I don’t have a single serve one.
